Voting currently works by having trusted members of the community manage the voting, but with electronic voting you need highly technical people that are also trusted members of the community, which is much fewer people.”

People have a public key which they use to vote, once only, there is also a central vote public key, so people can validate that they have sent there vote to the right people. Man in the middle attacks are not doable because everyone’s keys a signed by third parties previously over trusted channels.
The problem with that is that a vote is supposed to be anonymous and not able to be traced back to you specifically.
